Did anybody make the pumpkin baked oatmeal?

Planning our meals for next week and pumpkin sounds yummy...

Just wondering if anybody ever actually did this (I remember it was discussed in one of the many oatmeal threads). I'm wondering how much pumpkin to use...I'm worried that it'll turn out too moist.

i was going to do that one next but we had a bunch of strawberries that needed to be used so i just did strawberries this time. i'll try to do it soon.

One of us is just going to have to buck up and get creative. Just take notes so we know what works!

I'll be out of town all week. I can try it next week if no one beats me to it.

As soon as our current batch of blueberry is eaten, I'm gonna go ahead with the pumpkin, so I'll let y'all know if nobody else chimes in. :)

I keep wanting to try it too (and pumpkin pancakes) but my Whole Food's has been out of canned pumpkin for weeks and at Trader Joes it's seasonal. Let me know how it comes out. I have a ton of strawberries so I think I'll make it with those for now.
