View Full Version : what can I make with 2 day old baguettes?

Well, costco had me buying 6 pack on demi baguette. We ate 3 may be...

Now its been a couple of days and they are going dry, not good for sandwiches anymore.... How do I use them up?

Slice longways and make personal pizzas... DH used to do it all the time just add pizza sauce and some cheese and pop in the oven until the sauce is hot and cheese is melted!

Stick one in the food processor and make bread crumbs....I'm sure you could freeze the crumbs! Or better yet....freeze the bread if you think you will make bread crumbs from them soon. Might help them stay more fresh.

With all types of leftover bread, I've been making french toast casserole. It's not exactly low-cal... but yummy!

You just tear up the bread into chunks into a baking dish (8x8 is what I usually use for approx half a loaf). Then you beat these items together and pour it over the top: 1-2 cups milk, 4-5 eggs, vanilla, cinnamon, a little salt. Sometimes I add in a little maple syrup too - and if you want it to have some kind of nutritionally redeeming value you can add flax seed meal or wheat germ. If the bread is particularly tough, I have soaked it for a couple hours or overnight before cooking. It bakes for 45 minutes or so.

Croutes (toasted slices of baguette, use like a cracker)
Bread Pudding
French toast
Panzanella (salad with tomatoes, cukes, vinegarette)

I'm jealous... we never have leftover bread...

I turned whatever i could into breadcrumbs. Turns out I could not get to cut the baguette - it was so hard on the edges, used the middles for the breadcrumbs.

Thanks all...like the sound of the french toast caserole..next time!

DH made this hash brown casserole for me for Mother's Day. YUM.
You need 8 cups of cubed french bread. (It came to about a loaf and a 1/4)

We love those baguettes. They are a good deal if you actually eat them all. We buy and freeze them. They defrost/heat up really well.

I like the personal pizza idea, never thought of that.
