View Full Version : Corn Syrup-Free Caramel?

I'm making apple-pie flavored ice cream this week, but it calls for caramel sauce or dulce de leche. All the recipes I've found have corn syrup, which I don't want to even buy, let alone use. I'd be perfectly happy getting already-made caramel sauce (like for ice cream topping) if I could find one w/o corn syrup. Does such a thing exist? If so, where can I find it? Thanks!

I can't vouch for this at all, and I'm not 100% sure it's exactly what you're looking for, but it's caramel sauce and it doesn't have any corn syrup!

I know it's a brownie recipe, but I think you could just make the sauce.

Glad to help...I knew I'd recently read about making caramel somewhere, and that's where it happened to be! Let me know how it turns out. That second one does sound super easy.

FWIW...corn syrup and HFCS are *not* the same thing. I looked into this a long time ago as I make peanut brittle each year and we don't do HFCS. http://www.eatingwell.com/blogs/nicci_micco/2009_07_01/the_real_truth_high_fructose_corn_syrup_is_not_the _same_as_corn_syrup

Maybe this isn't the issue..just re read the OP. Well...it's out there for interest.

i make my own caramel sauce, cook sugar and water (2:1) and heavy cream (4:1). cook the sugar and water until amber being really careful and add cream when sugar solution is amber in color. it will splatter a bit so be careful and keep stirring.
