Quick Summer Meals

Now that summer is here we are spending our afternoons at the neighborhood lake. The kids have fun but come home tired & hungry. I'm looking for some ideas for things either I can make quickly or prep in the morning then quickly cook or reheat. DH is not big on pasta otherwise I would get more creative there.

we do quesadillas, shredded pork/chicken wraps (you can pre-make a big batch, freeze & use as needed), turkey burgers, flank steak with grilled veggies

My favorite summertime sandwich is tomato, mozzarella and basil - sometimes with procchiuto or capricola, but mostly without.

I made this for dinner last night, and it was amazing. If you make the chicken ahead of time, it is incredibly fast (and you can make the rice ahead too, if you wish).
