I like reading what others are having to get some new ideas.

We're having
Spinach Watermelon Blueberry Feta Salad
Potato Salad/Coleslaw
Corn
BBQ Chicken, Burgers and Dogs
Some type of dessert

post-parade snacks:

homemade guacamole, pico de gallo, and tortilla chips
vegetable platter w/dip
something else I haven't decided yet :)


meal:

hotdogs and burgers w/ fixings
corn on the cob
lemon potato salad
homemade baked beans
deviled eggs
brownies
watermelon

chips w/ mil's salsa and guacamole

BBQ ribs (with a cola bbq sauce)
avocado/black bean salad
BBQ sweet white corn
poblano pepper potato salad

frozen lime-aid pie
strawberries, blueberries w/ angel food cake

I've been watching the food network too much the last few weeks and I'm trying out the potato salad, bbq cola sauce and lime-aid pie recipes this wkend.

Nice to have a day off! Here s the salad recipe, the ingredients seem like a weird combination but its really good all together.

Watermelon Bluberry Feta Salad
2 tablespoons lemon or lime juice
1 tablespoon honey
4 cups fresh spinach leaves
2 cups seedless watermelon cut into cubes
1 cup blueberries
1/2 cup sliced unpeeled seedless cucumbers
1/2 cup thinly sliced red onion
1/2 cup feta crumbled

Whisk lemon and honey in a bowl, add spinach toss to coat.
Add watermelon, blueberries,cucs and onions.
Top with feta
Serves 4

well, we have several house guests coming in for the weekend so i have several menus that i'm working with :)

Saturday night:
Hummus, carrot sticks, sugar snap peas, pita chips
Tandoori-style chicken burgers served in pita with cucumbers & yogurt sauce
Roasted corn tabbouleh
Green Salad
Watermelon
Chocolate-Ricotta Ice box cake
Wine/Gin & Tonics/iced tea/lemonade


for the 4th, we're having a light breakfast before the parade:

homemade granola
yogurt
strawberry-blueberry muffins
fruit

after the parade and other festivities:

guac/salsa/tortilla chips/jicama
Flank steak and shrimp fajitas
Red rice
Black bean & corn salad
Green salad
Tres Leche cake with fruit
Margaritas/iced tea/lemonade
