salsa chicken in the microwave

For those who, like me, may not plan ahead enough to use the crock pot all the time: I learned that salsa chicken can be made in the microwave as well. I put 3 chicken breasts and about 1/2 a 16 oz. jar of salsa in a square casserole, covered and microwaved for about 10 minutes on high. (We have a low power microwave and these were bigger breasts, so for some 7 or 8 minutes would probably be enough. We always use a meat thermometer to check for doneness.) Then sprinkled some cheese on top and microwaved for another 40 seconds or so to melt. The salsa chicken in the crock pot has more flavor and shreds better. But the microwave salsa chicken was pretty tasty too, for a quick, no oven required meal. HTH someone!
