We will be unbelievably busy starting next week when Punkin starts school, with soccer and flag football and faith formation classes and RCIA (for me) and DH coaching both sports and DH playing soccer.... so I'm planning to use the crock pot as much as possible!!

I have the Fix it & Forget It Lightly cookbook and we've had some hits and many misses. I like seeing reviews for new recipes!! PLEASE share with me your favorite crock pot recipes- I'll take any but prefer ones that don't require prior preparation (I don't really want to have to brown meat before hand, stuff like that) and I prefer not to use canned cream of-whatever soup as an ingredient. Thank you!!

I love the salsa chicken! There are a bunch in the second link that are really good too...

I have had the most luck with recipes from here:

I love, love, love her commentary, and also the comments posted by readers. I even went and bought her cookbook. My first thought was, "why would you buy a cookbook if the stuff is online?" But the book is more organized, and, face it, sometimes you want to plan a menu without turning on the computer.

Our faves from here are the black bean soup - my 6 year old loves this and has no idea there are vegetables hidden in it - and chicken parmesan - I like to add noodles to cook with the chicken, they soak up the sauce and have a delicious texture. I have had some misses, yes, but she has a ton of variety. I used to think that everything cooked in a crockpot tasted the same.

I also love the crockpot for simple things like baked potatoes - regular or sweet potatoes - just wash and set them in there for 8 - 10 hours on low. They turn out perfect and are almost effortless. Easier than ordering in, even.

WOW, I never would have thought about baked potatoes in a crockpot! Although I tend to use the microwave, but this sounds very interesting. Do you poke holes in the potatoes (with a fork)?
