View Full Version : Veg. recipes w/Ricotta for 12 month old?

ISO some recipes I could use ricotta cheese in. I have a TON left in my fridge from a previous recipe. Any ideas?

I've already tried spinach-ricotta bites - and DD sometimes is interested and likes it and other times just chooses to play with it. blehhhhh

I make a veggie lasagna for the family that includes ricotta. I just cut it fine enough that a little one can eat it. It's based loosely on this recipe: http://allrecipes.com/Recipe/Hearty-Vegetable-Lasagna/Detail.aspx. I skip the mushrooms and use squash, zucchini, broccoli along with sauted onions and peppers in the sauce.

I know you were asking for recipes that use veggies, but this ricotta cheesecake is just tooo yummy for me to resist posting it anyway :-)

Is she eating eggs? There are quiches that use ricotta, and you can add in veggies or sausage as desired for extra protein.
