anyone have a pumpkin pie recipe without eggs? My mom doesn't eat egg and I would like to make a pie for thanksgiving that she can eat too. thanks!

Here's the recipe for a double layer pumpkin pie...it's fantastic and no eggs. Let me know if you have any questions -- it's not my recipe, but I have eaten it many times ;)

4oz cream cheese softened
1 TB milk or half and half
1 TB sugar
1.5 c thawed whipped topping
1 graham cracker pie crust (6 oz)
1 c milk or half and half
2 - 4 oz packages of instant pudding/pie filling
1 - 16 oz can pumpkin
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp cloves

mix cheese, milk (TB), sugar in large bowl with wire whisk until smooth
gently stir in whipped topping. spread on bottom of crust

pour c of milk into bowl, add pudding mix. beat with whisk until well blended (1-2 minutes). mixture will be thick

stir in pumpkin and spices with whisk. mix well. spread over cheese layer

refrigerate at least 3 hours

Cornstarch will do the same job as the eggs. One TBS per egg or so should work. Cream cheese adds a good flavor as well.

A nice way to dress up a pumpkin pies is to finely crush some pecan and sugar mixture and press that directly into the inside of the pie dough once you have put it in the pans.

Was delicious! I guess they substituted the original recipes eggs with cornstarch - worked wonderfully! I should try LMPC's recipe sometime now.
