View Full Version : Help me use up this leftover Costco Rotiserie Chicken

I swear I never know what to make with it after the first night....

I've done soup....but it's hot here today.
Quesadillas or enchilladas ....don't have all the ingredients at the moment
Chicken Pot Pie (anyone have a favorite receipe?)

Any other uses besides chicken salad (DH won't eat)?

I don't want to toss it and need to use it up ASAP!

I like this recipe - you could just skip the first part and saute carrots with the onions....then add peas with the chicken, broth and milk.

I love the Pioneer Woman's chicken pot pie recipe, but it is not online, just in her cookbook.

Or combine it with a can of drained & rinsed black beans, some sweet corn, and mayo and make wraps.

Or just freeze the shredded chicken for another day. :)

OP, so what did you end up making?

Sorry I'm late, but i thought i would answer in case someone searches later.

i get the meat off the bones and make broth. if i don't want to make soup right away, i freeze the broth and use it later.

WIth the meat, i either make Mexican lasagna that i make with enchilada sauce instead of salsa (and sometimes a can of cream of chick soup instead of sour cream) or a Paula Dean casserole i tweaked because i didn't have the same ingredients at home.

Adapted Paula Chicken Rice Casserole
1 (14 1/2-ounce) can green beans, drained and rinsed
1 big can of chicken, or 2 to 3 cups chopped cooked chicken
Couple handfuls of sliced almonds
1 (10 3/4-ounce) can condensed creamof chicken soup
1/2 cup mayonnaise
Sprinkle of onion powder
1 package uncle ben's ready whole grain medley brown and wild rice--micro in 90 seconds, cooked according to package directions

handful of cheddar into the casserole and a handful over the top to get crunchy.
Preheat oven to 350 degrees F.
Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.

OP, so what did you end up making?

Thanks for the suggestions all. I ended up making a chicken pot pie. I sauted some onions and celery and then added 1 can cream of chicken soup and maybe 1/3-1/2 cup milk to thin it out. I let that heat up and then added frozen veggies (peas, carrots, green beans, corn) and the chicken.

I baked a puff pastry sheet and served that on top (instead of using another pan to put entire "pie" in the oven I just heated it stove top.

I'll have to try the other recipes as well.
