View Full Version : Please post your favorite easy to make casserole / bake dish

I am not a cook at all, but would like to start making some more meals for my family. I really like recipes where you can throw all the ingredients into a bowl, heat in the oven, and serve. Here are two of my favorites. I'm wondering if anyone has any other easy-to-prepare casserole / baking dishes?

Chicken & Stove Top Stuffing Bake
Ingredients:
1 pkg Stove Top Chicken stuffing mix
4 boneless skinless chicken breasts (approx 1.5 lbs)
1 1/2 cup hot water
1/4 cup (1/2 stick) butter or margarine, cut up
1 can cream of mushroom soup
1/3 cup sour cream
Pepper
Garlic Salt

1. Mix stuffing, hot water, and butter in a large bowl until butter is melted.
2. Place chicken in 13 x 9 baking pan.
3. Mix soup and sour cream and spread evenly over chicken.
4. Sprinkle pepper and garlic salt to taste.
5. Top with stuffing mixture.
6. Bake at 375 for 35 minutes or until chicken is cooked through.


Hash Brown Casserole (side)
Ingredients:
2 lb frozen hash browns
1 stick butter / margarine
16 oz sour cream
1 can cream of chicken soup
8 oz shredded cheddar cheese
1 Tablespoon garlic salt
crushed chips or cornflakes

1. Defrost potatoes.
2. Melt butter and combine with soup and sour cream.
3. Add potatoes, cheddar cheese, and garlic salt to mixture.
4. Grease 9x13 pan and pour in mixture.
5. Sprinkle chips on top.
6. Bake at 350 for 1 1/2 hours.

Just made this today, from the Six O'Clock Scramble. It was SO good.

Crustless Spinach Pie
10 oz package frozen spinach, defrosted and drained
1 cup ricotta
3/4 cup parmesan
4 eggs
3 finely scallions
3/4 cup mushrooms (I used tofu instead, was yum)
salt
oregano
basil
Mix up, put into lightly greased 8x8 casserole
375 for 35 minutes
Done when set and slightly browned
Serve with pineapple chunks and bread

I posted this a few weeks ago:
Ingredients:
2 chicken breasts
4T butter
4T flour
1c chicken broth (optional)
1c milk (if no chicken broth, double the milk)
1 box of Near East brand chicken flavored rice pilaf (or other brand like Rice a Roni)
1c broccoli (I just used frozen florets, unthawed)
panko bread crumbs

I poached 2 chicken breasts in water, salt and a little olive oil. Shredded it once cooked. Set it aside.

I made a white sauce with 4T of butter, 4T of flour and 1c chicken broth and 1c 1% milk. Once done I took it off the heat and added the seasoning packet of the rice pilaf mix to the white sauce.

I then added the chicken, rice and broccoli to the white sauce and stirred it together. Poured into a casserole dish, topped with bread crumbs, baked 40 minutes covered (or until rice is done). You can uncover it the final 5 minutes to brown the bread crumbs if you want.

I wondered if I should cook the rice first but it turned out fine.

Anyway, it was fast and easy. The kids love rice pilaf so I already knew the flavor profile would be a success.

I usually only make casserole type dishes when i have leftover chicken. or if i'm desperate to make something from the pantry, i use the big can of chicken (from costco or TJ). So these recipes are reposted from the "how do you use up your rotisserie chicken" post.


Mexican Lasagna that i make with enchilada sauce instead of salsa (and sometimes a can of cream of chick soup instead of sour cream). it's even better the next day after it sets a while.

Adapted Paula Chicken Rice Casserole
1 (14 1/2-ounce) can green beans, drained and rinsed
1 big can of chicken, or 2 to 3 cups chopped cooked chicken
Couple handfuls of sliced almonds
1 (10 3/4-ounce) can condensed creamof chicken soup
1/2 cup mayonnaise
Sprinkle of onion powder
1 package uncle ben's ready whole grain medley brown and wild rice--micro in 90 seconds, cooked according to package directions

handful of cheddar into the casserole and a handful over the top to get crunchy.
Preheat oven to 350 degrees F.
Mix all ingredients together and pour into a greased 3-quart casserole dish. Bake for 20 to 25 minutes or until bubbly.

Chicken Pot Pie --i use the recipe from the Veg All can.

This sounds great and I have all the ingredients! Do you think this would be good if I added chopped chicken thighs?

Chicken, Lemon, and Dill with Orzo, from Everyday Food
Serves 6 | Prep time: 10 minutes | Total time: 50 minutes

ingredients

4 cups low-sodium chicken broth
1 tablespoon unsalted butter
1 1/4 teaspoons coarse salt
1/4 teaspoon ground pepper
1 pound chicken tenderloins, cut into 1-inch pieces
1 pound orzo
2 cups crumbled feta (4 ounces)
1/4 cup coarsely chopped fresh dill
2 teaspoons finely grated lemon zest, plus 1 tablespoon fresh lemon juice
1 cup grated Parmesan

1. Preheat oven to 400 degrees. In a saucepan, bring broth, 3/4 cup water, butter, salt, and pepper to a boil.
2. In a 3-quart baking dish, combine chicken, orzo, feta, dill, lemon zest and juice. Pour broth mixture over orzo and stir once to incorporate.
3. Bake until orzo is tender and cooking liquid is creamy, 40 minutes. Sprinkle Parmesan on top and let stand 5 minutes before serving.
