View Full Version : What is for dinner- weekly dinner menu

Need some ideas for end of the week.

Monday- red cabbage and apples with pork and greens
Tuesday- BBQ Pork and veggie (mushrooms, onions, carrots) sandwiches repurposed pork from Monday on whole grain rolls, Pineapple
Weds-seasoned brussel spouts and chicken sausage, salad
Thurs- Potato and Zucchini Pancakes with Greens and Oranges
Friday- Shrimp Fajitas.
Sat- veggie and potato hash
Sun- Roast chicken, roasted broccoli and some sort of potato dish.

Monday - Manicotti and garlic bread (uses no boil lasagne noodles!)

Tuesday - White Chili and cornbread
½ lb pork ( I used thin cut center loin chops and cut them into bite size cubes)
1 meduim white onion ( chopped)
1 tsp oil
1 ½ tsp cumin
¼ tsp garlic powder
1 cup cooked wild rice
16 oz navy beans ( drained)
16 ox garbanzo beans (drained)
4 oz white corn (drained)
1/8 tsp pepper sauce
14 ½ oz chicken broth
½ cup parsley

Sauté onion and pork in large pot with the oil. When pork cooked add beans, corn, seasonings and broth. Bring to a boil and simmer for 30 min. add parsley at end if desired.

Wednesday - Roast turkey breast, stuffing and veggie

Thursday - Sweet Potato Gnocchi with Citrus Cream and Spinach

So far only -

Mon: Chicken Pot Pie
Tues: roasted chicken drumsticks, AKA "Chicken on the bone"
Wed: Getting meat csa tonight, have to see what we get
Th - Sat: I am away, so whatever DH makes for himself and DDs! that means takeout, soup and eggs, LOL!!!

Tues.- homemade potato soup, salad and bread
Wed.- meatballs, gravy type sauce (like you'd get with Swedish meatballs- any recommendations?) and noodles
Thursday- orange chicken in the crockpot per a recipe here
Friday night- out

Sun - Chicken soft tacos, pineapple, chips & salsa
Mon - Pineapple meatballs & brown rice
Tue - Leftover pineapple meatballs, brown rice & green beans
Wed - Chicken pot pie, cranberries
Thur - leftover chicken pot pie, applesauce
Fri - at friend's house for dinner, just need to bring dessert - thinking about apple cake & vanilla ice cream
Sat - homemade pizza, salad
Sun - meatloaf, not sure of sides yet

I've made the Gnocci a few times and love it. The kids eat it too :)

I got a spaghetti squash from our CSA and was looking for something new....so the pie is a new recipe.

Monday - stir fry
Tuesday - sausage & peppers
Wednesday - taco night
Thursday - shrimp fajitas
Friday - Corned beef & cabbage (an easy version from Paula Deen)

Saturday - going to my mom's
Sunday - we eat out after church so dinner is usually light: cereal, sandwiches, etc.

Wow!! Ok - this is where I hope to be some day. How do you do that much cooking? My DS1 is the same age as your DD and he makes it very hard to cook. He gets super clingy whenever I go into the kitchen. Does your DD help? TIA

DD does help in the kitchen a lot....I have a stepstool at the counter and let her mix, measure, etc. I also have most of the commonly used ingredients on a low shelf so she can get them for me (salt/ pepper). She loves to help dry the dishes, set the table and take the trash out. I usually use a Target bag to put dinner prep trash in so she can carry it on her own.

If I'm cooking something she can't help with, she plays "cups and water" - two bowls, a few measuring cups and a towel on the floor so she can transfer the water from bowl to bowl. When she gets bored with that, we bring out "cups and beans". :)

I also choose recipes that are pretty quick and easy. Meatless two nights, soup one, something roast in the oven another, etc....

It takes a lot of patience to let them help, but both of my kids really love being in the kitchen and I find that they are much better eaters when they've helped prepare the meal.

Thanks for sharing - I'm going to try to include DS1 more often and see if that helps.

I decided to add Shrimp Fajitas into the menu to fill it out (finally using that lonely bag of shrimp from the bottom of the freezer, LOL), and Potato Zucchini Pancakes with greens and oranges the other night. Making a lot of pear desserts to use up all the darn pears in the house. :boogie:

Mon- Grilled steak and sauteed spinich with rice
Tues- Spaghetti
Wed- Grilled salmon, zucchini, and rice
Thurs- Chicken corn soup with rice and also a side of crusty bread
Fri- Leftover soup :love-retry:

Wknd- Not sure yet, if the weather is nice, we'll grill out, probably burgers for sure.

Yum! Lots of good ideas in this thread. Our plan for this week:

Monday: tacos
Tuesday: Chicken and dumplings with peas, carrots & parsnips
Wednesday: Hot dogs, beans & fruit salad (DD was cheering at a playoff football game)
Thursday: ham, potatoes, lima beans
Friday: Homemade pizza & roasted broccoli
Saturday: ham & bean soup, cornbread

Here's my recipe. (DDs ate this weekly for two straight years. Loved it. LOVED. DD2 would beg for it and cry when it wasn't for dinner. Then one night, randomly out of the blue and without warning, they both decided they hated it. I retried last week and it was a fail. Oh well, it's still a great recipe, I swear!! DH and I ate it all!)


Chicken Pot Pie

One Pillsbury pie crust, defrosted
2 tblsp butter
1/2c onion, chopped
2 stalks celery, chopped
2 tblsp flour
1pkg frozen mixed veg
2 cups chopped cooked chicken (I have sometimes used perdue short cuts if I don't have cooked chix on hand)
1/2 cup milk
1 cup chicken broth (Milk & chic broth in one measuring cup)
1/2 tsp ea spices of your choice, thyme,basil, dill, etc.
S & P to taste

Preheat oven to 425

melt butter in saucepan,
add in onion and celery, cook until softened.
Add in flour and make paste
Pour in milk/chix broth combo, add in spices and stir until thickened.

In the meantime, defrost veggies in pie plate. Add chopped chicken
POur sauce over veggie/chix combo

Top w/piecrust, crimp sides, slit top

Bake 30min or until top is golden brown. (Note, some sauce may bubble out of sides of pieplate.)

Here is a new chicken pot pie recipe we tried and love. It is a little non-traditional as the "pie" is on the bottom of the casserole. It's easy to make and can be made ahead of time and thrown in the oven when you get home! I don't like mushrooms so I use cream of chicken or celery.

1/2 cup butter, softened
1 cup (8 ounces) sour cream
1 egg
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon rubbed sage
1 package (16 ounces) frozen mixed vegetables, thawed
2 cups cubed cooked chicken or turkey
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1/2 cup chopped onion
1/2 cup shredded cheddar cheese

Directions

In a small bowl, cream butter and sour cream until smooth. Beat in egg. Combine the flour, baking powder, salt and sage; add to creamed mixture. Spread into a greased 3-qt. baking dish.

In a large bowl, combine the vegetables, chicken, soup and onion. Pour over crust; sprinkle with cheese. Bake, uncovered, at 400° for 35-40 minutes or until heated through. Yield: 6 servings.
