my dbf is a cheese connoisseur and he requested mac and cheese for thanksgiving. he loves the creamy style but i cant seem to find a good recipe. anyone?! many thanks

If your DBF is sensitive to onions, use finely chopped shallot instead. (I use shallot instead of onion whenever I'm making this for a gathering that includes kids.)

I've made this one and the adults seemed to really like it. I used a good, sharp cheddar (Cabot's Hunter's Sharp).

I've made it with pepper jack cheese too - makes it a bit hotter :)
I also always put frozen thawed spinach as a layer before baking.

I use the America's Test Kitchen recipe which is quite similar to the Pioneer Woman's version. I usually just use whatever cheddar cheese I have on hand. I think ATK requires a can of evaporated milk instead of the egg. Don't laugh, but if I have it on hand I also add some Velveeta cheese to it make it a tad more creamy (it does taste quite good, and I never tell people I put it in there; it's my secret ingredient)
