OMG--Thank you, thank you to the folks at King Arthur flour!! I have been making apple pies for 20 years and they are passable. So finally, this year, I bit the bullet and got the recipe (had seen it but never tried it). I even ordered the danged boiled cider. Holy cow--it was so good!!
I also think it didn't hurt that I made the pie the night before and then put it in the fridge so the filling was really solid when it was served after dinner. (it had been out for at least 2 hours)
I don't know what I am going to do with all the boiled apple cider--make mini pies for xmas gifts. although I am honestly considering making another pie today--(insert bag over head smilie here)
