View Full Version : Good shrimp/seafood recipe?

We do a traditional Christmas Eve here, no meat just fish/veggie. (And peanut butter sandwiches for DD1. :))

Usually my Aunt and Uncle make a Zuppa di Pesce that takes they 3 days to prepare. It's so good but they are away this year and the rest of us slackers aren't up to it.

Any suggestions for a good shrimp or seafood dish? We already do angel hair with walnuts, so a scampi won't work. The easier the better!!!

Can it be as easy as just steamed shrimp or steamed clams?
How about Jambalaya? I've got an old Cooking Light jambalaya recipe.

This recipe is super easy. I didn't think that arugula wouldwork with cod, but it really does:

We didn't make it with the mashed potatoes - we do a Polish Christmas Eve, which is also meatless but we make potato/cheese pierogies, so it seemed redundant to have mashed potatoes too. But the cod with the arugula salad was very tasty and would make a nice course. since you will have toher dishes as well.

This year we're doing potato pancakes and a Korean-style fish stew. I made one last year and it was great. I don't have a specific recipe, I just make it up following directions in several cookbooks, but basically you saute some onions, add anchovy stock (you could use the Japanese version, dashi, or clam broth or veggie stock) and various bits of seafood in the order it takes them to cook (longest cooking goes in first). Fresh clams are good b/c thier liquor adds a lot of flavor to the broth. I also add a bit or Korean chili poweder but you could use cayenne or some other, or skip it altogether.

I watched an Ina Garten episode last night and am totally annoyed with DH because he doesn't want to have it, but she made a "seafood gratin" with lobster, shrimp, halibut, in a saffron cream sauce with a parm/crumb topping. I'm sure you can get it from the Food Network site.

That's the best new idea "I" came up with that was shot down by DH. We've since agreed on an etouffee (crawfish if available; otherwise, shrimp).

I made this on Christmas Eve two years ago. It was fantastic, and even my FIL, who doesn't like anything, loved it.
