Just cooking for my kids & DH before we head out to TS3 on Ice at 2pm.
Looking for any ideas!

I am making Pioneer Woman's cinnamon rolls! YUM!!!!!!!!!!! I'm also making an egg casserole and not sure what else.

This recipe is easy, can be put together the night before and is a dish that everyone loves.

Blueberry Oven French Toast presented by The Liberty Hill Inn
Ingredients:
Italian bread (large loaf)
6 eggs
1 1/2 cups half & half
1 1/2 cups milk
1 tsp. vanilla
1/2 tsp. lemon oil or 1 Tbls. lemon zest
1 tsp. cinnamon
dash of nutmeg
Topping:
1 stick butter, softened
1 cup brown sugar
1 1/2 cups blueberries, rinsed, sorted and stemmed

Butter a 13 x 9 Pyrex baking dish
Slice Italian Bread 3/4" - 1"
Arrange bread slices in pan
Mix eggs, vanilla, milk, 1/2 & 1/2, lemon oil, cinnamon and nutmeg in large bowl
Pour over bread
Cover with plastic wrap and refrigerate overnight

Next morning:
Liberally sprinkle fruit on top of bread
Mix butter & brown sugar with pastry blender or fork
Sprinkle topping over fruit and bread mixture

Bake for 40 minutes @ 350 degrees

Dust with confectioner's sugar and serve warm

I make that french toast bake too and it's always a hit.

I'm also making


Denver Breakfast Bake

2 tablespoons of butter or olive oil
¾ cup diced onion
1 ½ cups julienne cut mixed red and green peppers
1 tablespoon of minced garlic
8 eggs
3 cups Half & Half
1 teaspoon of salt
¼ teaspoon of pepper
8 cups - 1 inch diced hearty French bread (I used one loaf of Italian
bread)
1 ½ cups julienne cut ham
2 cups (8 oz.) coarsely shredded cheddar cheese
½ cup grated Parmesan cheese

1. In a large sauté pan, heat butter or oil over medium high heat.
Add onions and peppers and sauté about 4 minutes. Add garlic and cook
30 seconds more. Remove from heat and set aside.

2. In a large bowl, whisk together eggs, Half & Half, salt and pepper
until well combined. Add bread, ham, and cheddar cheese and ¼ cup of
Parmesan cheese and pepper/onion mixture. Place in a buttered 11 x 13 inch baking pan.
Sprinkle remaining ¼ cup of Parmesan cheese over top. Cover and
refrigerate at least 1 hour or preferably overnight so that the bread
soaks up the egg mixture.

3. When ready to serve, bake at 350 degrees until puffy and golden and
a knife inserted in center comes out clean (approximately 50 -60
minutes).

We did chorizo enchilada pie! First time, winged it because I went to make the egg dish I had planned and realized that my husband had bought chorizo instead and that clashed with the ingredients for the prepared dish. So I dug out some corn tortillas, mushrooms, refried beans, Mexican cheese, olives, tomatoes and salsa and onions. It was a hit so we will do it again next year. New tradition.
