View Full Version : Favourite Meals that don't have meat?

I would like to add a couple of new recipes to my rotation that don't have meat in them. We aren't vegetarian, but I want to cut down on our meat consumption.

This is one of our favorites!

Mexican Stuffed Peppers
4 large red or green peppers
1 T olive oil
1 c chopped onion
2 ribs celery, diced
1 t cumin
1t chili powder
1 t basil
½ t oregano
2 c cooked brown rice
1 ½ c cooked and drained red kidney beans
2 T tamari or shoyu
Cayenne to taste
1 ½ c canned tomatoes with juice
1 can tomato paste
Sliced cheese

1. Preheat oven to 350.
2. Cut peppers in half lengthwise, remove seeds
3. Steam peppers for 10 mins, cut side down, in a single layer
4. Heat oil in skillet. Add onions, celery, and spices. Saute until the onions are tender
5. Add the rice and beans, mix well. Add the tamari and cayenne to taste. Mix again.
6. Fill each pepper with the rice and bean mixture and place side by side in a baking dish.
7. Mix together the canned tomatoes and tomato paste. Break up any whole tomatoes. Pour mixture over the peppers.
8. Cover with foil and bake for 30 mins
9. Uncover the dish and top the peppers with cheese. Return to oven for 5 more minutes to melt the cheese
Serve with a big green salad and slices of avocado.

Any kind of frittata (egg dish with veggies that's easier to make than an omelet)

Thanks for sharing. When you make this do you make your own corn bread (as stated in the recipe) or do you cheat and use a package? Do you think it would matter? I have all the ingredients except for corn meal but I have a jiffy corn bread mix.

I make my own cornbread (DD1 has a peanut allergy and making things from scratch is second nature at this point!) but I couldn't imagine why you couldn't use jiffy mix. GL and I hope you enjoy it!

This is one of my favorite dishes ever! I actually made it so many times when I was pregnant with DS that the rest of the family totally burned out on it, and now I can only make it every couple months. Oh well...

I used to make this one a lot: African Pineapple Peanut Stew (from the Moosewood Cooks at Home)
It's very tasty and one of the only ways I eat kale (spinach works too).
Very easy/fast. Serve over rice.
I need more vegan recipes since I can't have dairy.

Ingredients:


1 cup chopped onions
4 garlic cloves, minced
1 TBSP olive oil
One bunch of kale (4 cups chopped)
2 cups of undrained (and unsweetened) canned, crushed pineapple (one 20 oz. can)
1/2 cup natural peanut butter
1/2 cup chopped fresh cilantro
salt and pepper to taste
Toppings: coarsely chopped peanuts and chopped scallions

Directions:


1) In a saucepan, saute the onions and garlic in the oil over medium heat for 10 minutes, stirring frequently until the onions are lightly browned.


2) While the onion cooks, wash the kale, remove the stems, and stack the leaves on a cutting board. Chop the kale well (ours came to about 1 inch slices)


3) Add the pineapple and its juices to the onions and bring to a simmer. Stir in the kale, cover, and simmer for about 5 minutes, stirring occasionally until the kale is just tender. Mix in the peanut butter and cilantro and simmer for 5 more minutes. Add salt and pepper to taste.
