I love the chicken salad (but sub dried cranberries for the grapes) and the make ahead muffin melts. I also just made a batch of the Tortilla Soup and it was reallly good.

I love her chicken salad too.

My dh loves the chicken spaghetti too. It was a lot of work for me, though, so I've only made it a couple of times.

I can't pick just one. My serious loves are:

Chicken Pot Pie
Corn Chowder http://thepioneerwoman.com/cooking/2010/10/corn-chowder-with-chilies/
Pizza Crust http://thepioneerwoman.com/cooking/2010/02/my-favorite-pizza/
Grilled Chicken & Pineapple Quesadillas http://thepioneerwoman.com/cooking/2010/05/grilled-chicken-pineapple-quesadillas/
Strawberry Shortcake Cake http://thepioneerwoman.com/cooking/2009/05/strawberry-shortcakecake/
Chocolate Sheet Cake http://thepioneerwoman.com/cooking/2007/06/the_best_chocol/
ETA:
This burger http://thepioneerwoman.com/cooking/2009/01/my-most-favorite-burger-ever-for-now/

I'm sure there are many more I have forgotten, too.

Most of the recipes mentioned so far are from her website - some recipes are on the web & in the cookbook, some are just in the cookbook. Out of the list I posted, the Chicken Pot Pie is only in the cookbook, the rest are all on the website (some in the cookbook too).

So far, Dh and I would say it's her Beef with Snow Peas. If you like good Chinese, this is great!

We love her salsa. I've made her enchiladas too, but they were way too time-consuming and didn't taste any better than my much quicker recipe.

Just discovered Pioneer Woman and tried the make ahead muffin melts. DD didn't care for it, but that just meant more for me! Yummy!

I'm going to try the chicken spaghetti based on everyone's recommendations.

Please, keep posting your favorite recipes!

I'm going to have to look up this chicken spaghetti. It sounds really good. I think I made the chicken pot pie once (or a hybrid of her receipe), and it was really good.

The citrus muffins in her cookbook. Talk about a sugar rush!

Chicken pot pie is AWESOME! I used her pie crust recipe and it really made the dish.

I also tried the enchiladas--WAY time consuming and dirtied too many dishes for me.

I made the Cinnamon Rolls once and wasn't bowled over like I though I would be. But I think I made a misstep when making them, so I will try them again.

Her Lasagna is excellent and that Chocolate Sheet Cake is TDF.

I am making her Perfect Pot Roast and Crash Hot Potatoes tomorrow.

I looked up the receipe for the chicken spaghetti and there's a blog post with pics, but also this printable receipe. Can't wait to try it this weekend when DH is home.

Yum! Which chicken pot pie recipe is it? It looks like she has several.

ETA: Is it the Leftover Turkey Pot Pie recipe? I got confused on her website. I think I was looking in the community recipes rather than PW's recipes.

It's not on her website, just the cookbook. I posted it last month at the bottom of this thread: http://www.windsorpeak.com/vbulletin/showthread.php?t=380544&page=2 Enjoy!

We love the Pasta al la Betsy, the Spicy Shrimp (as a meal for the two of us), her chocolate sheet cake, and just about all of the baked goods. I agree the enchiladas are time consuming and I prefer my version. I've taken her lasagna and merged it with mine and it's a big hit.

Would you share *your* recipes for the enchiladas and lasagna?

My kids love her enchiladas but it is a bit messy to put together!

They also love her perfect pot roast (very easy and delish IMO), calzone and pizzas, her pie crust and chicken pot pie together are wonderful, her braised beef brisket, and spicy pulled pork are a great hit and in France people loved it and wanted the recipe...the beef brisket and pulled pork are great for when you are going to have lots of people over...because it is a lot of food but it allows you to cook ahead and enjoy your guest.

For breakfast/brunch her migas and sour cream pancakes are wonderful.

I like her book but wish there were more recipes...her site is a lot fun and I have gotten some great recipes there too. She has one for green beans that the kids love.

I have her perfect pot roast in the oven right now. I was hoping to make crash hot potatoes along with it, but I probably won't have time because I got the pot roast in too late. :(

I am making her tomato soup tonight.

Gah, did NOT like the tomato soup. I guess I was expecting something more creamy.

Made the Chicken Spaghetti last night. I just kind of winged the measurements b/c I didn't know how much pasta I had. I used Costco rotisserie chicke, added peas and sundried tomatoes instead of pimentos (couldn't find those for the life of me). Very good and rich. I did use 98% Fat free soup, so maybe that helps a little.
