View Full Version : Anyone have a good soft pretzel recipe?

DD and I had a blast the other day making soft pretzels. She's 3 and her's were free-form, but she had so much fun with it. I want to try making some again this weekend.

We used a recipe that came with our breadmaker, and it was just so-so. They were yummy right out of the oven, but even later that day when they cooled off, they were kind of dry and bland.

Anyone have a great pretzel recipe?

I sometimes use half or all KA white whole wheat flour and it works fine. The kids like to sprinkle cinnamon sugar on them, too.

Those recipes sound divine, thanks!

Now, do I dare replace some of the flour with whole wheat, or do I just leave well enough alone...

ETA: Since I liked the idea of parboiling them before baking them, we tried the Alton Brown ones first. They are delicious, in a very dangerous way! They were serious about oiling the sheets though, mine stuck to the parchment paper. We're going to try the KA or Mel's ones later this week, and I'll make a big batch of one of them for the Superbowl next weekend. Then I will officially have thrown my diet to the wind. And I don't care one bit - they are that good :-)

I made the KA version today. I didn't oil my parchment & it stuck to the paper. I did another batch on a pretty nonstick cookie sheet & they stuck. You really need to oil your surface. Maybe not silpat? Dunno.

I bet silpat would work! I also found someone recommend oiling the sheet, then sprinkling the sheet with sesame seeds or cornmeal.

I just came back to this thread to make my pretzels today... sorry I missed your question!

The pretzels were definitely best just out of the oven, but they were still very good the next day. The second day, they were a little tough. I microwaved them for a few seconds and served them to the kiddos (and me) - wouldn't necessarily serve them to anyone else that way :p Next time I'll probably freeze half the batch right away.
