I saw a 2010 at the park and I like the soft back, can you remove/replace the piece on the 2011?

Yes. The board is removable. You have to unvelcro the top and pull the board out. It's pretty wedged in there so it may take some effort but it is not a permanent board (I did confirm this with baby jogger as well).
