I bought a pint of fat-free half-and-half to make graham cracker ice cream, but never got around to making it. I want to make the ice cream today, but the half-and-half says "Use by 5/9/11". I have not opened the carton at all. If it makes any difference, it is not a custard-based ice cream and the half-and-half will not be cooked at all prior to being mixed into the ice cream. Should I use it or toss it? Thanks!

Use! 2 days isn't a big deal to me.

As long as it doesn't smell I'd use it.

Not even a question- that is barely expired! Smell and proceed. Odds are it is perfectly fine...and would be fine even on 6/9, ime!!

I'd plan to use it but would sniff it before pouring it in just in case.

If I tossed things that were 2 days expired then I'd waste a lot. :D

I'd sniff and then taste it and as long as it smelled and tasted fine, I'd use it!

I would use it. I was always told that most unopened dairy products that had been stored in the fridge were good for about a week after the expiration date.

I made Punkin smell the half-and-half, because dairy products NEVER smell good to me!! the ice cream turned out awesome :D And it is the easiest ice cream recipe I've ever made (and I make a LOT of ice cream!)

Graham Cracker Ice Cream:
2 cups fat-free half-and-half
1/2 cup sugar
1/2 vanilla bean
3 fat-free graham crackers, crushed.

Combine half-and-half and sugar in a large bowl. Split the vanilla bean lengthwise and scrape seeds into the bowl. Whisk. Pour mixture into ice cream maker (I use the Cuisinart one - love it!) and process for 20-25 minutes. Sprinkle in graham crackers, continue to process for 5 minutes. Transfer to tupperware bowl and freeze (or just eat it ;) )

So yummy, and relatively "not-as-bad-for-you" as most creamy ice creams. Good topped with caramel sauce too :jammin:

Use it...if it smells funky or there are funky lumps...then toss. Other two days and it was never opened you should be fine.
