View Full Version : Must share my new (slightly healthier) Banana Bread recipe!

Discovered our Harrist Teeter has browning bananas in discount bags for dirt cheap. (I know other groceries do this, too but have not seen it at Food Lion or the commissary where I am relegated to normal shopping).

I wanted to make it a little healthier (but still taste good). And it was a success!

So...here it is!

1 stick Earths Balance, room temp
3/4 measuring cup filled half with agave syrup and then topped up with brown sugar
2 eggs
1 cup bread flour
1 cup whole wheat pastry flour
1 tsp baking soda
2 tsp cinnamon (maybe more?)
1/2 tsp salt
3 large ripe - almost too ripe - bananas - cut in slices or chunks, not mashed
1+ tsp vanilla

Preheat oven to 350 degrees. Grease a loaf pan.
Cream Earths Balance and sugars until fluffy.
Add eggs & vanilla and beat well.
Sift dry ingredients all together.
Slowly stir in dry sifted mixture, beating well to mix thorougly.
Fold in bananas.
Pour in to greased pan.
Bake for 45-50 minutes.

YUMMO.

We LOVE the chunks of banana instead of mashed. DD helped by cutting the bananas in to slices and chunks with the side of a fork. We had a blast making it together and the end result is super yummy.

I am going to try it again with all whole wheat flour and maybe eventually an egg replacer and/or maybe with all agave.
