We went apple picking yesterday and had such a good time we ended up with over 13 pounds of yummy apples. Now I need to do something with some of them besides snack on them whole.

So please share your favorite apple recipes.
It could be for pie, w/pork, tarts, breads, you name it, TIA!

My family loves when I slice up the apples, throw the slices in a baggie with cinnamon and sugar, then dump them on a tray and bake for 10 minutes at 350. They still should have a but of a crunch to them. I pretty much just serve them plain and people devour them! I don't have an exact recipe though for the cinnamon and sugar, I just kind of eye ball it all.

Apple Squash Soup

Brussel Sprouts with Bacon & Apple

Muesli Pancakes (my adaption from a recipe in the Stonyfield Yogurt cookbook)
1 cup oats
1 cup milk
1 cup plain yogurt
1 apple, peeled and grated
3/4 tsp vanilla
3 eggs, beaten
3/4 cup whole-wheat flour*
3/4 cup A/P flour
3/4 tsp baking soda
3/4 tsp baking powder
3/4 tsp salt
1/4 butter, melted or vegetable oil

*I have started using all white whole-wheat flour instead of a combination.

Combine oats, milk, yogurt, apple and vanilla in large bowl. Let sit for 15 minutes. Whisk together dry ingredients in medium bowl. Add eggs and butter or oil to wet ingredients and stir. Stir in dry ingredients until just combined.
Cook on oiled griddle (350 degrees on electric) about 3 minutes per side.

Hahaha - we just got a bag of McIntosh apples in our CSA after I bought some from Costco. I'm making apple butter in the slow cooker.
I also love to roast squash, onions and apples in the oven. Cannot find the link but it is just a delicious combo! Just cube, toss in olive oil, salt, pepper and roast! Yummy!

Those sound so good...I will definitely be trying that! Does it work better with any particular kind of apple?
