My DS has fallen in love with TJ turkey meatballs, so Mondays are Meatball Mondays at our house now. DH and I have pasta and sauce with ours.

I would love some ideas for the rest of the week. What are you having for dinner tonight?

I'm thinking glazed pork chops (http://budgetbytes.blogspot.com/2010/08/glazed-pork-chops-655-recipe-163.html) with roasted sweet potatoes (http://fortheloveofcooking-recipes.blogspot.com/2009/03/roasted-sweet-potatoes.html). I found both recipes via Pinterest. We haven't tried this sweet potato recipe yet but the pork chop recipe is a big hit. It is super easy and so yummy.

Butternut squash soup...sooo good. I have been using this recipe for years, its super easy. I make it with chicken broth instead of the vegi broth but it is a vegan recipe if make the way its written.

ETA: I will be making this later in the week. It is wonderful I use apple juice instead of hard cider (I never have hard cider I always have apple juice), I use frozen shredded potatoes to make the potato pancakes and use whatever kind of apples I have around. It is sooooo good. Every time I make it people are licking their plates the apple butter sauce is so good. Oh and I don't use caviar, its just not something we have around very often.

Pioneer Woman's recipe of the day is Sausage, Potato and Kale soup and she says it tastes a lot like Zuppa Toscana soup. Both recipes look really yummy!

I think a whole bone-in chicken breast in the crock pot, as we're out from 2 - 6:30 this aftn. Plus something fast on the side... maybe sauteed green beans and rice.

I need some inspiration too

we had TJ's turkey meatballs and pasta last night with a salad and homemade garlic bread.

I need something that can be made quick tonight cause the boys have TKD at 5:30 ... my hubby is going to his own night class so it'll just be me and the kids. It might be a freezer night ... black bean and corn enchilada for me and TJ's mini beef tacos for the kids. That or I might pick up a rotisserie chicken from the grocery store on the way home, I do have some green beans in the fridge that need to get cooked.

Tues is Back to School night at school so my mom will feed the kids, DH and I will probably pick up something quick

Wed. maybe tacos?

Thurs. maybe make your own pizzas ... the kids have been asking to buy the TJ's pizza dough and make our own.... gotta buy some pepperoni and shredded mozzarella for that.

Fish chowder. We usually buy what's on sale at the fish counter, but This week everything was expensive aside from some frozen-at-sea cod. We won't eat previously frozen fish normally, so chowder it is.

DH is out of town, so there's not much point to cooking dinner, since my kids don't generally eat anything at dinner. :(

I'm going to try Counting Soup, out of Mollie Katzen's "Salad People" kids cookbook. You put out bowls of veggies (peas, corn, chopped blanched carrots, blanched green beans), cooked alphabet noodles, and tofu (but my kids don't like tofu, so I'll have cannelini beans and chopped cooked chicken) and let the kids put in 1 spoon of peas, 2 spoons of corn, etc. (really, whatever amounts they want) and then pour heated broth over it.

What will likely happen is that they'll fill up their bowls, try it, and say they're full. Then they'll come back to the kitchen 10 minutes later and say they just got hungry and can they have a snack? Or maybe they'll surprise me and actually eat tonight!

Tacos. Quick, easy and Dh likes my taco meat better than anywhere else!

The kids won't eat them though. Well, Ds would, but they eat earlier so they'll have pasta with tomato sauce.

Taco salad. Beef was precooked and thawed from frozen. I'll just heat it up, add some spices, and that's it. We have a busy week so dinners are quick this week.

Bean soup. I actually remembered to soak the beans last night. And I was able to start dinner before I left. I left directions for DS#1 to remove the ham bone and cut off the meat and put back into the soup and to add the veggies I chopped. I just hope he remembers to otherwise the kids won't be eating until after I'm home tonight.

Smoked tri tip and polish sausage. Baked 1/2 potatoes. Garlic toast. Red hot applesauce jello. Corn.
Mississippi mud cake and ice cream for dessert.
DH helped plan menu as we were gone yesterday on his birthday.

-roasted organic chicken (bought already roasted)
-salad (kale,spinach,tomatoes,cucumbers,red onion,cilantro and apple vinegar/olive oil)
-roasted purple potatoes (bought them at farmers market on sunday, yay, they really are very very purple! it was fun to cut them and eat them)

We had shirataki noodles with eggs and steamed veggies (cauliflower, bell peppers, beans, peas, and carrots). Plus cinnamon ebelskivers for dessert!

Last night: home made meatballs w thin spaghetti and green beans

Tonight: old recipe from my mom...chicken divan which is a chicken and broccoli casserole. Stumped for a side though

Tomorrow night: pulled pork, coleslaw, and perogies

I'm def going to try the kale and sausage soup. Saw some kale at farmers market on sat that looked beautiful!

Last night, we had something I made up on the fly-- boneless, skinless chicken thighs, cubed, sauteed with large-diced onions and green peppers, and minced garlic. Added a packet of TJ's taco seasoning (I had 2 lbs. of chicken because I was cooking for lots of lunch leftovers), a can of diced tomatoes, a can of Rotel tomatoes, and simmered for a while. Served taco bowl style over brown rice with corn, guacamole, and shredded cheese for toppings.

Tonight, we're having halibut in parchment packets with green beans and thyme, and roasted potatoes.

Last night was a delicious homemade Carrot soup from the Moosewood cookbook along with salad and challah bread. Best thing I have eaten in ages! I think tonight will be corn chowder because I still have the delicious bread and they'd go great together.

Since this was started yesterday, I made 2 roasted chickens with garlic and rosemary, mashed potatoes and corn. Tonight is going to be pot roast, rice and peas. We're so boring here- I need to borrow some of these ideas!

Last night we had mariinated tri tip roasted in the oven with roasted broccoli and a TJ cous cous 3 grain thing and grilled romaine on the side. Tonight is leftover trip tip cut into strips for fajitas/buritos: meat, black beans, mexican rice, cheese, olives, onions, salsa, etc. YUM

oven roasted salmon tomorrow. not sure the sides. Probably turkey burgers Thurs. Pizza friday.

tonight the crockpot version of cassoulet in the cook's illustrated cookbook. i've never tried it, so fingers crossed. (it doesn't use duck.) oh, and bread machine bread. i'm really into my bread machine right now. isn't it funny how your cooking or whatever goes in waves of using something over & over and then forgetting it entirely?

I eat Paleo, and in general we eat lower carb. So we don't do the pasta thing that often but funny enough, last night my kids had the TJ's turkey meatballs with WW organic spaghetti and veggies.

Tonight will be turkey meatloaf made with oatmeal instead of bread crumbs, brown rice, and veggies.

Tomorrow will be what my kids call Crunchy Crunchy...panko & parm. cheese crusted tilapia. (I don't bread my tilapia)

I had some pinto beans I'd made earlier in the crockpot. The first night we served them like a baked potato (saw it on a blog and loved it). So just the beans without the liquid and greek yogurt, cheese, bacon and green onion.


Tonight I took the rest of the beans and sauteed a mess of onions, added garlic and spices then the beans and pureed them into refried beans. I made cheese & bean burritos and will serve it with greek yogurt, tomatoes, and hot sauce on the side.

I actually cooked today!

Spice brined and rubbed pork tenderloin (so good... even the kids eat it if I knock off the peppercorns.... I took some over to my parents also and it was inhaled).

Monday was leftovers and Tuesday was Subway. Hey, it's ANYTOBER!!! All footlongs are now $5. ;)

Tonight, to atone for my culinary and nutrition sins, I am making a very healthy and hearty barley and bean soup with a buttload of veggies. I might even throw in some extra ones.

I had to make PWs Sausage, potato, kale soup when I saw it mentioned yesterday. :) So that's what we had tonight. Yum! It's definitely a keeper - maybe next time I'll try daisymommy's version with beans...
