We went apple picking and I am looking to make some kind of dessert/pastry using apples.
Right now I am thinking of some kind of crumb-cake/coffee cake type dessert, but I'm up for anything.

Care to share any favorite recipes :)?

My kids LOVE this apple raspberry crisp. I've made it just with apples too (kids love it that way too) ~ when I skip the raspberries, I cut down on the sugar a bit since I lose the tartness of the raspberries. I make this crisp a lot in September, when I'm bringing home tons of raspberries from our CSA and apples are plenty left and right (I've only made it with fresh raspberries). It's also super easy to make; DD can now make it by herself, although I help with the apple coring and peeling.

A fall favorite that's topped with vanilla ice cream or lightly sweetened whipped cream.
Yield: Makes 6 servings

1 cup (packed) golden brown sugar
1 tablespoon plus 1/2 cup all purpose flour
2 1/2 pounds Granny Smith apples (about 5 large), peeled, quartered, cored, thinly sliced
1 cup frozen unsweetened raspberries (unthawed)
1/2 cup old-fashioned oats
1 1/2 teaspoons ground cinnamon
1/4 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, diced

Vanilla ice cream or whipped cream

Preheat oven to 350°F. Mix 1/2 cup golden brown sugar and 1 tablespoon flour in large bowl. Add apple slices and frozen raspberries and toss to coat. Transfer apple and raspberry filling to 8x8x2-inch glass baking dish.
Mix oats, cinnamon, salt and re-maining 1/2 cup golden brown sugar and 1/2 cup flour in medium bowl. Add chilled butter and rub in with fingertips until moist clumps form. Sprinkle oat topping evenly over filling.
Bake crisp until apples are tender and oat topping is golden brown and firm, about 1 hour. Cool 15 minutes. Serve crisp warm or at room temperature. Scoop into bowls; top with ice cream or whipped cream.

We also love this apple walnut cake from Bon Appetit. I double the recipe every time, it goes so fast. It's great with and without walnuts.

Serves 12.

2 cups diced peeled tart green apples (such as Granny Smith; about 1 1/2 large)
1 cup sugar
1/2 cup (1 stick) unsalted butter, melted, cooled
1 large egg
1 1/4 cups all purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup coarsely chopped walnuts


Preheat oven to 375°F. Butter and flour 8x8x2-inch baking pan. Mix diced apples, sugar, butter and egg in large bowl to blend. Sift flour, cinnamon, baking soda and salt over. Add chopped walnuts; mix thoroughly. Transfer mixture to prepared pan.
Bake until cake is brown and crusty on top and tester inserted into center comes out clean, about 45 minutes. Cool cake in pan on rack.

Another apple crisp recipe. I saw this on a Barefoot Contessa episode. I love making this, it's so easy and good:

Ingredients
2 pounds ripe Bosc pears (4 pears)
2 pounds firm Macoun apples (6 apples)
1 teaspoon grated orange zest
1 teaspoon grated lemon zest
2 tablespoons freshly squeezed orange juice
2 tablespoons freshly squeezed lemon juice
1/2 cup granulated sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg


For the topping:
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
3/4 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup old-fashioned oatmeal
1/2 pound (2 sticks) cold unsalted butter, diced


Directions
Preheat the oven to 350 degrees F.
Peel, core, and cut the pears and apples into large chunks. Place the fruit in a large bowl and add the zests, juices, sugar, flour, cinnamon, and nutmeg. Pour into a 9 by 12 by 2-inch oval baking dish.



For the topping:
Combine the flour, sugars, salt, oatmeal, and butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed for 1 minute, until the mixture is in large crumbles. Sprinkle evenly over the fruit, covering the fruit completely.
Place the baking dish on a sheet pan and bake for 50 minutes to 1 hour, until the top is brown and the fruit is bubbly. Serve warm.

Was just coming to post about this recipe. Getting ready to make it for my DS for his birthday. The best apple cake ever! I also use light cream cheese.

Yep, this one is our favorite apple cake!
