View Full Version : What do you serve as a side with chicken tacos?

I'm stumped. I want something healthy, in this case no corn or carbs bc of the taco shells.

I'll do refried beans but I feel like I need something else...any ideas?

It's just dinner for the family, but I take it pretty seriously...I feel so responsible for developing healthy eating habits.

What about black beans or pinto beans?

I made these (http://allrecipes.com/recipe/mexican-beans/detail.aspx) for DS' birthday party....we had a taco bar.

Refried beans gross me out...

Do you do toppings like tomatoes, avocado/guacamole, and salsa? When I do tacos I just make sure there are healthy toppings and don't stress about traditional side dishes. If i was feeling super ambitious, or it was a party or something, I'd probably make a green salad with jicama and avocado in it and top it with some sort of salsa based salad dressing.

Yes, we will have all the veggie toppings. I guess I just needed to be reminded that those count as veggies! :-)

Fresh fruit sounds refreshing. I did that a lot in the summer (fruit as a side dish with dinner), but have sort of gotten away from it. I'll run over the store and see what looks good. I also have some cut carrots and broccoli I'll put out with some dip.

Part of my problem is that I am feeling super lazy about dinner this week...not sure why. Prob because I have so many other things to get done in the next couple weeks I just don't feeling like take the time to think/plan/make dinner!

I rarely serve a side dish with tacos...just the tomatoes/lettuce toppings and maybe avocado or some fruit.

I usually serve baked sweet potato "fries" seasoned with olive oil, salt, pepper, and cumin.
