I've gotten tired of never ending salad now that it's getting cooler so I've been making soups to take to work. Anyone else? Here's what I've made so far:

Veg Beef
2 cans veg-all
2 lbs ground beef-browned
1 can beef broth
1 can roasted tomatoes
seasonings

Veg Beef try 2
2 lbs ground beef-browned
1 carton beef broth
1/2 carton of mushrooms
2 squash diced/sauteed
1 onion diced/sauteed
1 can crushed tomatoes
1 can tomato paste
2 cans green beans, cut slightly
1/2 bunch kale, diced
seasonings

Pumpkin Sausage
1 lg can pumpkin
1 thing (lb) of sausage (you know the kind you can break up)-browned
1/2 carton of mushrooms
1/2 bunch kale, diced
1 box chicken broth
cook it a while, then puree it. Add 1.5 cups of heavy cream.

The first recipe made about 4-5 servings, the other 2 made 8 (2 cup) servings. I froze most of them, keeping out what I'll need for this week. The first one was very, very easy, the other 2 took a little while but still not bad.

Anyone else making soup?

I am by no means a true low carber, but I know I feel better and have an easier time getting to and maintaining a good weight when I go low carb-ish. So along that process I do my own verision of Italian Wedding Soup

1 lb ground beef
2 eggs, beaten
1/2 onion, grated
3 tbsp grated parmesan
1 tsp dried basil

Mix, form into small meatballs, place on cookie sheet/jelly roll pan, place under broiler until lightly browned (turn half way through cooking)

Meanwhile heat six cups of chicken broth until boiling.

Add
1 garlic clove minced (we add more, we love garlic)
2 cups of kale, finely sliced
Juice and zest of one lemon
Browned meatballs


I eat it like that, but for my boys I add 1/2 cup of orzo, cooking as long as package directions indicate
