Black Bean Salsa Soup

-2 cans black beans, drained and rinsed well
-16 oz fresh salsa (I usually purchase Jacks brand salsa/pico de gallo in the refrigerated produce section.)
-1 bunch fresh cilantro, washed and stems trimmed
-1 tsp cumin
-1 to 1 1/2 cups chicken broth ( add more or less depending on how thin or thick you want your soup)
-sour cream
-shredded cheese

Purée black beans and chicken broth in a food processor until smooth. Add half of cilantro and half to three quarters of salsa. Process again until most chunks have disappeared.

Pour the purée mixture in a saucepan and add cumin. Heat and stir occasionally until soup is warmed. Top with sour cream, cheddar cheese and fresh chopped cilantro.

This soup is great on a weeknight! Sometimes I chop leftover chicken and add it when I heat it. I have also added chili powder or cayenne pepper to give it some kick.

Haha, that is the zuppa Toscana from Olive Garden. I'm not a fan of the restaurant except for the soup. I make my copycat version every once in a while, even during the summertime. The recipe is very close to yours, except I add a small palmful of bacon bits in my soup. Sometimes I switch the kale for chard, but I think kale works best.

DH loves it, and surprisingly so do my IL's!

Whole Foods soup bar Garden Vegetable soup. I"m obsessed with it and just bought all of the ingredients to recreate it. Although, after doing that I think I am convinced that it is cheaper to just buy it from them.

I am excited about this thread b/c DD and I LOVE soup and make it as often as possible.
