please share your favorite sweet potato recipes for Turkey Day! I'm a huge anti-candied-sweets person, so i've volunteered to bring the alternative

Mashed with a little salt, pepper, garlic and butter, milk to thin.

I roast the sweet potatoes in the oven. Take them out the skins and dump them in my kitchen aid mixer. Then I add a can of crushed pineapple and some salt and pepper and whip them with the whisk attachment. It's so yummy, easy and healthy.

If you like spicy food, I love, love, love them mashed with a little bit of canned Adobo chili peppers added in. I don't have a specific recipe, but if you google it there are several out there. I got rave reviews last year at Thanksgiving from everyone who tried it. Beware, the chili peppers are hot, so I also reserved some without for the kids.

My mom makes delicious sweet potatoes that she peels, slices and bakes until about 1/2 done; then, she sautees them with slices of fresh apple, salt and pepper and butter. She doesn't add cinnamon, sugar, etc...the apple itself is sweet but not in a candied way at all. The potatoes retain their natural sweet potato flavor.

Here's my version, with a few adaptations to the above recipe

Ingredients


3 sweet potatoes
1⁄4 cup white sugar
2 eggs beaten
1⁄2 teaspoon salt
4 tablespoons butter softened
1⁄2 cup evaporated milk
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1⁄2 cup packed brown sugar
1⁄3 cup all-purpose flour
3 tablespoons butter softened
1⁄2 cup chopped pecans


Directions

Preheat oven to 375 degrees F (165 degrees C).

Bake sweet potatoes on a baking sheet for 1-1.5 hours. When soft, cut in half and squeeze or scoop out insides.

In a large bowl, mix together the sweet potatoes, sugar, eggs, salt, butter, milk, vanilla and cinnamon. Mix until smooth. Transfer to a 9x13 inch baking dish.

In medium bowl, mix the sugar and flour. Cut in the butter until the mixture is coarse. Stir in the pecans. Sprinkle the mixture over the sweet potato mixture.

Bake in the preheated oven 30 minutes, or until the topping is lightly brown.

It's a very flexible recipe ~ you could do just sweet potatoes and one other veggie, for example. I just made it earlier this week with CSA veggies ~ I had yellow potatoes, no parsnips and a ton of sweet potatoes and Brussels sprouts, so that's what I used. I also usually throw in some garlic too. Yummmm. I can eat it just by itself for a whole meal. It's a great side dish for Thankgiving too.

This is the recipe I used for Thanksgiving this year. This is definitely a keeper. I also only used 1/4 cup of sugar in the potatoes (instead of 1/2 cup). I also baked the potatoes first instead of boiling. I used 3/4 cup of pecans, but might use a full cup next year. In fact I think we will use this recipe for every Thanksgiving from now on! Everyone LOVED this.

Poor DH had a cold and couldn't really taste it so I might make it one more time for him. Ack! who am I kidding? I want to eat it all myself.
