Also, how early can I grate the carrots? Can I grate them tomorrow then refrigerate and bake Wednesday?

Triple layer carrot cake with cream cheese frosting. Sooooo good, and I'm usually meh on carrot cake.

I think you should be fine if you grate the carrots tomorrow and bake on Wednesday.
