I love endive leaves with a dollop of goat cheese. I don't have a recipe I can recommend but a quick google search shows a bunch of recipes with variations (adding nuts, diced apples, etc.).

I like smoked trout on endive. I have made it with a citrus type sauce on the trout. There is a recipe on epicurious for cream cheese smoked trout on endive that looks good:

We used to get endives with nuts (forgot what kind), goat cheese and orange slices at a tapas place. I have also heard of drizzling a little honey on that combo.

my mom used to just marinate mushrooms in Italian dressing and ate them on the endive leaves
