View Full Version : Turkey Breakfast Casserole (NOT turkey sausage) ideas?

I am doing a Day After Thanksgiving Brunch and want to do a breakfast casserole with egg and turkey and maybe some cheese. My friend has celiac, so my usual french toast is out the window. I am serving 6, so frittatas are tricky for timing.

Any casserole recipes or ideas?

I would do something with hash browns for the base....Simply Potatoes are Gluten Free.

What about a layer of sauteed onions & mushrooms mixed w shredded turkey, a layer of cheese, pour some beaten eggs & milk over it all, and then top with mashed potatoes and maybe another layer of shredded cheese (parmesan, gouda, etc)? You could even add a layer of sliced tomatoes or cranberry sauce right under the mashed potatoes, I bet that would be tasty.

That sounds pretty good to me. I'd probably season w/ a lot of black pepper, some sage, and salt. Maybe a dash of hot sauce or dijon mixed into the eggs.

Not really a casserole, but I was also thinking turkey hash of some sort that you could serve with eggs. I saw Ina make this on TV a few weeks ago and it looks really tasty.
