My children requested pancakes this morning and I tried a new recipe that I found in this book:

It was terrific. The pancakes were very fluffy and the topping of choice at our table was Nutella.
Here are the ingredients:
1 egg
1 1/4 cups plain yogurt (I used whole milk yogurt)
1 cup all-purpose flour (will try whole wheat flour next time)
1/2 tsp salt
1/2 tsp baking soda
Combine egg and yogurt first and the mix in remaining ingredients.
I doubled the recipe for our family of five and there are no pancakes left.
