I am thinking of making 2 kinds. One will likely be the test kitchen's holiday cookies to decorate. Need another suggestion?

Ihave shortbread in the oven now & made toffee last night. Both super easy!

Yesterday, I made thumbprints with lemon 'spread' (found with the jams/jellies). I added about 1/2 tsp lemon extract to the shortbread and then did the thumbprint thing and added the lemon spread. So. Unbelievably. Good. And easy! The most difficult part was mixing the dough (would have been easier with the KitchenAid stand mixer I have on my 'Santa' list :loveeyes:). All in all, it was a super simple recipe and so delicious!

How easy is the America's Test Kitchen cutouts recipe? I am looking to make cutouts for the first time and I need a good recipe!

So as to be confusing, I used two. LOL Just kidding, it is not confusing at all. I used this recipe for making the dough:

Instead of the almond extract, I used 1/2 tsp lemon extract. I also did not use the glaze. Just prepared the dough using that recipe. I then used a different recipe for the cookie prep:

Scroll down to the 'Jam Shortbread Thumbprints' instructions. Instead of jam, I used lemon spread (tastes exactly like the lemon from lemon meringue pie!). Super easy to do (despite the many recipes ;)) and they were a huge hit!
