Best vegetable side dish for roasted pork belly

Going to make pork belly (Jaimie Oliver recipe) on NYE. I plan on making mashed potatoes but I don't know what vegetable to make? TIA

Or oven roasted carrots, parsnip, etc?

mashed parsnips with roasted brussel sprout leaves! I had that exact meal at How To Cook a Wolf and it was so good that I found a similar recipe to make at home. I've made them several times - DS loves them!
