project with elementary school kids?

I'm wondering if you have ideas for a project for my second grader and I to do together during our downtime. We used to love to do crafts and read together, but he mostly isn't that interested or wants to read on his own. Any suggestions for bonding activities? We've been doing the occasional board game. Looking for something creative or unique that we can do for a longer period of time (like once a day over the course of a month or through the winter). Thanks!!

We've just got this book: http://www.amazon.com/Geek-Dad-Awesomely-Projects-Activities/dp/1592405525/ref=sr_1_1?ie=UTF8&qid=1325614374&sr=8-1 for Christmas. It has several project ideas. DS read it and is now bugging DH to do some projects with him. :)
