View Full Version : Keep or toss - homemade tomato sauce

DD and I made homemade marinara last week on Tuesday (so 6 days ago). We used some and I put the rest in the fridge with the intention of letting it cool off and then freezing it.

I forgot about it and it's still in the fridge.

Is there any reason I shouldn't go ahead and freeze it? (In the interest of full disclosure, I'm usually on the "toss" side of things, so I need more objective opinions b/c I really don't want to toss this out! Also, it sat out on the counter for a couple of hours before I remembered to put it in the fridge the first time, which makes me more leery.)

I keep opened jars of tomato sauce for weeks, so I would say "keep." I don't think tomato products are as perishable as some others. As long as the tomatoes you used were fresh, I think you'll be fine.

If the tomatoes were at all "iffy" though, I would toss.

If it looks and smells fine, I'd definitely keep it! Tomatoes acidity keeps it fresh for a long time. If you want, you could reheat to hot and then cool and freeze.
