My daughter's birthday is next week and am thinking of just keeping it simple and getting a cake mix (white/vanilla and chocolate) for the cupcakes. What brand cake mix have you been happy with?

I also remember an ex-colleague of mine who added one ingredient to make it moist but I couldn't remember what that is. Would appreciate your suggestions.

Thanks :)

I only use Duncan Hines. They're cakes always come out super moist, I've never had a problem with them.

Duncan Hines, without a doubt.

As for adding ingredients, some people add an extra egg, a brick of cream cheese or a pack of dry pudding mix.

I like Trader Joe's mixes the best.

Duncan Hines or Bety Crocker. Add nothing to the mix except maybe chocolate chips.

I use a doctored cake mix from here-

I've used it many times including my sister's wedding cake and it has always been a hit with everyone. I do cut back on the sugar though. I use 1 1/2c instead of two. I usually buy duncan hines mix, but really any of them will work.

My favorite is Duncan Hines Dark Chocolate Fudge

Try applesauce instead of all the oil. This will reduce fat and add moisture. I can't remember the ratio off hand, but I think it is now on most of the boxes.

I use duncan hines cake mixes and add one extra egg and a package of same-flavor pudding mix and it makes the cake moister and denser IMO. I get lots of compliments!

Trader Joe's. Just made some today for DH's birthday. I am a baker and everyone expects me to make things from scratch and they usually think the tj's cake is from scratch. No doctoring needed.

Also want to add that homemade frosting makes a huge difference. I never buy store frosting, it can't compare!
For vanilla I like the sprinkles buttercream recipe and for chocolate I likethe "rich chocolate frosting" on allrecipes. Both are easily googled (on my phone so can't link for you). Yummy!

I love all recipes. Found your two frostings. Thanks!
