I'm tired of just slicing them and putting salt/pepper. Tired of salads...etc. Any other creative ways to use up these cukes?

Cucumber sandwiches! Sandwich bread with mayo.
I also like a heartier cucumber, cheese, and mustard sandwich. Maybe with tomato and sprouts.

If you add mint it's even better!!! I drink gallons of it when I have it around!

I also LOVE this recipe. My family can go through 4-5 cucumbers in a day when I make this salad!

you've done cukes and tomatoes with italian dressing on them, right?

Add chopped pieces to chopped flat leaf parsley and tomatoes, green onion or finely chopped red onion, squeeze on lemon juice and EVOO and some salt.

Creamy cucumber salad and the pickled/vinegar version of the same

Top with cream cheese, chives, and smoked salmon

make tsatziki sauce

I sprinkle a few drops or white vinegar on them and let them sit for 10 minutes, sauté them in a little butter and add a tiny amount of fresh dill. It's excellent mixed with fettucine Alfredo (but go easy on the dill - XH called it pickle pasta once :P )

There is a smoked salmon cream cheese (Philadelphia kraft) that I spread on cucumber slices. Sometimes I spread it on a rice cake and top it with cucumbers. Not for everyone, but I love it.

the usual side dish in eastern nc is to salt them for 15 min or so, give them a quick rinse, and cover with cider vinegar. add some black pepper & done.

Bread salad with something like ciabatta, tomatoes, cucumbers, basil and balsamic dressing.

I do a Greek style salad: chopped cukes, tomatoes, black olives (pitted) and feta tossed in a mix of oil and vinegar. I like to use something like raspberry vinegar for the added flavor. It's perfect because cukes and tomatoes are both in season right now :)
