Made this tonight and it's so pretty and delicious!

I used Trio Italiano San Giorgio pasta and summer crisp corn (it really is the best canned corn I have ever bought) www.delmonte.com/products/detail.aspx?id=413&c=214.243 (http://www.delmonte.com/products/detail.aspx?id=413&c=214.243). I also substituted Gorgonzola for the blue cheese as we prefer it. If I made it solely for kids I would probably replace the blue cheese (or whatever) with a cheddar. Also substituted red pepper for the orange pepper.
Going in my recipe box for sure!!
