If you had to share JUST ONE recipe what would you share?

For me, it would be my spinach basil pesto. My DH and kids love this, it is easy and fresh and always works out. Plus we get our lemons and basil from our garden!

Here is the recipe. Put the following ingredients in a blender in this order:

3/4 cup fresh basil leaves
1 1/2 cup baby spinach leaves
1/2 cup grated parmesan
1/2 cup pine nuts
1 T fresh squeezed lemon juice
3/4 tsp salt
1/2 tsp pepper
1/2 cup olive oil.

Blend till it becomes a "sauce" and serve!

We have it over pasta, on pizza and with breadsticks.

Coquito - must be fully stocked during the holidays......

1 can of cream of coconut
1 can of condensed milk
1 can of can of evaporated milk
1/2 cup sugar
2 tsp vanilla
2 tsp cinnamon
Bacardi white rum (I use about 1/4 of a regular bottle in a double recipe)
5 egg yolks

Mix sugar and eggs (I use my KA mixer). Add in milks and cream of coconut. Add rum to taste and a bit of vanilla and cinnamon. Bottoms up. Yum.

OK full disclosure this is not *my* recipe, but every time I make it I get people raving over it. It has the added benefit of being SUPER easy to make. ;)

1 cup spreadable cream cheese
1 can Stagg chili (I use con carne but have made it with vegetarian and it is just as good! I guess this would be a 15 oz can - it is around 350-400g if anyone is good at metric conversion ;))
1 cup salsa
1 cup cheddar cheese, shredded

Spread cream cheese in the bottom of a pie plate (I use a Pyrex one). Pour can of chili over the cream cheese. Spoon/pour the salsa over the chili, and then sprinkle the cheese over top. Bake for about 15 minutes at 350 (basically long enough to melt the cheese and warm the whole thing up). Serve with taco chips.

I am a biscotti making fool at the holidays. Probably the chocolate biscotti is the hands-down favorite, but it's a close tie with the cranberry pistachio.
(Not my own recipe)

DOUBLE CHOCOLATE WALNUT BISCOTTI

2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda
1 teaspoon salt
3/4 stick (6 tablespoons) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 cup walnuts, chopped
3/4 cup semisweet chocolate chips
1 tablespoon confectioners' sugar

Preheat oven to 350°F. and butter and flour a large baking sheet.
In a bowl whisk together flour, cocoa powder, baking soda, and salt. In another bowl with an electric mixer beat together butter and granulated sugar until light and fluffy. Add eggs and beat until combined well. Stir in flour mixture to form a stiff dough. Stir in walnuts and chocolate chips.

On prepared baking sheet with floured hands form dough into two slightly flattened logs, each 12 inches long and 2 inches wide, and sprinkle with confectioners' sugar. Bake logs 35 minutes, or until slightly firm to the touch. Cool biscotti on baking sheet 5 minutes.

On a cutting board cut biscotti diagonally into 3/4-inch slices. Arrange biscotti, cut sides down, on baking sheet and bake until crisp, about 10 minutes. Cool biscotti on a rack. Biscotti keep in airtight containers 1 week and frozen, 1 month.

Makes about 30 biscotti.

Blueberry Oatmeal Muffins. They get great reviews here! (ETA: I consider this a BBB recipe, since that's where I got it! ;)) But also Christmas Bark and Cranberry Brie bites (ridiculously, embarrassingly easy). I've posted both these before as well!


Blueberry Oat Muffins
(Makes 12)

1 cup rolled or quick-cooking oats
1 cup sour milk
1 cup flour (I usually do half whole wheat flour)
1 tsp. Baking powder
½ tsp. Baking soda
½ tsp. Salt
¾ cup brown sugar, packed
1 egg, beaten
¼ cup melted butter
1 cup blueberries (fresh or frozen)

Preheat oven to 400 degrees. Combine oats and milk, let stand 5-10 minutes. Combine dry ingredients in another bowl. Add egg and butter to oat mixture and stir well. Stir oat mixture into dry ingredients. Fold in blueberries. Fill lined or well-greased muffin tins with an ice cream scoop, and bake for 20 minutes.

Double the recipe as needed – these muffins freeze really well, if you don’t eat them all before they cool completely.



NOTE: Substitutes for buttermilk/sour milk:
1 cup milk w/1 tbls lemon juice or white vinegar
Equal amount sour cream
Equal amounts yogurt/milk

Here it is- not my recipe but so easy to make and a great side during the colder months or on Thanksgiving. It always gets a lot of compliments.

Sweet Potato & Apple Hugel

ingredients
4 cups medium sweet potatoes or yams, peeled and finely chopped
2 green apples, cored and thinly sliced
1/2 cup raisins
1 cup apple juice or water
1/2 cup matzo meal or bread crumbs
1/2 cups walnuts

directions
Preheat oven to 375 F. In a large casserole dish, mix together all the ingredients. Bake uncovered for 45-50 minutes.

I have never heard of this before, but I'm dying to try it now.

I posted it in a desert thread once in the cooking forum and a few people have tried it. I think it has the BBB seal of approval now. :loveeyes: My mom makes it and I have always loved it. It has the bonus of no unusal ingredients so I can make it pretty any time from what's in my kitchen. It is very, very, extra yummy with fresh berries, whipped cream and ice cream.

It can be made ahead of time. Just make sure it is refrigerated. I keep gallons of it handy during the holidays! :rotflmao:

I don't really follow a recipe, I kind of just made it up but I made this for my DD's first birthday and people raved about it.

Cut up boneless skinless chicken thighs into thirds (you could leave them whole but takes longer to cook).

A few red peppers cut into thin strips

Onion (I've used all kinds including red they all work) cut into chunks

Potatoes (fingerlings or small red or baby Yukon gold), unpeeled. You want enough to cover the pan. You can use regular potatoes but I would peel them and cut them into thin strips or bite sized pieces.

A few cloves of garlic, whole

Salt, pepper and oregano

Olive oil

Preheat the oven to 375. Throw it all in a baking pan, I use the lasagna size pan to make enough for four people plus leftovers. Salt, pepper and oregano to taste. Pour the olive oil over it all and mix it up so it all gets coated. You can pull the garlic cloves out after it cooks I'd you don't like it but they get roasted and are so good if you squish them open. Cook until the potatoes and veggies get soft. Usually a half hour to 40 mins.

Great thread! I cook a lot and I don't play favorites with my recipes. They change every time I make the dish again!!! DD is going to have a hard hard time trying to reproduce them.
But I made this super easy cheating cake for DD's birthday and thought I would share that.

Incredible melted icecream cake

One box cake mix (I used vanilla)
One pint premium ice cream (I used HD French vanilla)
3 eggs
I kids serving of apple sauce ( I just used an applesauce cup from TJs)
Couple of tablespoons of vegetable oil

Beat together on low for a minute then on medium for 2 minutes. Bake at 350 till done.
I have heard that chocolate cake mix and Cheery Garcia ice cream is incredible.

eta - obviously you can play around with the flavor combinations a lot. I did white cake with coconut pineapple icecream and that was great too.

That sounds so good. But can you taste the eggs at all? I am guessing not with the milk and the alcohol.

I made this last night, and my family loved it! I doubled the gravy as well. I think this will be a regular in our meal rotation. Some of us are diary intolerant, so I just used coconut oil instead of the butter and unsweetened almond milk in the gravy, and it was GREAT!
