View Full Version : quick help needed breakfast casseroles - savory & sweet

DD is being christened on Sat mid-day. I will have my ILs and my family here in the morning before we leave for the church

want to be able to throw two casseroles in the oven - one savory & one sweet. so that i can serve breakfast food without any hassle or to-do

please share you most favorite make-the-night-ahead breakfast casserole options

i need to run out and buy my supplies tomorrow morning

I've served this a few times:

Savory casserole:

butter a 9x13 dish

toss a bag of pre-shredded hash browns in the dish

add your choice of meat: crumbled breakfast sausage, crumbled bacon, diced ham, etc (or no meat)

add (if you want) your choice of: sauteed onions, 1 bag of thawed frozen spinach (water squeezed out), 1 diced & sauteed green pepper

sprinkle 2 cups of shredded cheddar cheese on top

pour on: 6 eggs, whisked up with 2 cups of milk, seasoned with salt & pepper to taste. sometimes I add some thyme, too.

Bake for 1 hour, or until the eggs are fully cooked and the center feels firm. Let cool for at least 15 minutes before serving.

I've also done a pan of cinnamon rolls; I make them the night before & let them rise in the fridge, then throw them in the oven in the morning.

wencit, do you fully prep the savory casserole ahead of time? or do you have to do the egg part the morning of?

I get everything prepped the night before (measure out the cream, the cheese, chop the parsley, etc), and just mix the egg mixture the morning of and pour over the sausage mixture. Takes 5 minutes.

breakfast was a hit! made both the savory casserole from wencit, and the french toast casserole made with challah and with the topping cut in half
