View Full Version : What is corn casserole?

I signed up to take corn casserole for the Thanksgiving lunch at DS's preschool (everything else was taken when I saw the list). I noticed that muffins/cornbread was also on the list though. My corn casserole is basically cornbread with corn and sour cream in it so having cornbread as well would be a bit redundant. Is it possible they meant something else? I guess I could call or email and ask, but I was hoping to go ahead and get the ingredients when I shop tomorrow.

We've done 2 versions - the one with corn muffin mix in it and then another one my husband calls cheesy corn bake. We got the recipe from Jack Stack BBQ restaurant. Both are yummy!

I make a recipe I got on these boards. It's to die for!
4c corn, thawed
4 eggs
1c whipping cream
1/2c whole milk
6T sugar
1/4c butter, softened
2T flour
1t salt
2t baking powder
mix together, bake at 350 for about 45 minutes or until center is firm (closer to an hour+ times, iirc- make it earlier so you aren't waiting on it!) [I think that my dish choice is to blame. I use a casserole, deep dish pan. I have since seen it in cookbooks prepared in more of a 13X9 type pan]

I think it is akin to what my husband makes that he calls "corn pudding", no significant amount of flour to make it into a muffin/bread type thing. The recipe SnuggleBuggles posted looks about right!

I dont care for corn bread but I love this.

It is from a radio DJ in the LA from the old Mark & Brian Radio Program. I was 2000% skeptical until I tried it about 10 yrs. ago and it has been a favorite since.
