I made an acorn squash soup the other day that was yummy. IIRC, you make soups often, right? If so, you probably can wing it like I did. I roasted the squash with olive oil and salt for a good long time (1.5+ hours). While it was cooking I sauteed a half of a sweet onion. I then scooped out the squash from the peel and put it in the onion pot along with a box of chicken broth. Simmered it for 30-45 minutes. I then hit with an immersion blended till extremely smooth- easy since I'd cooked the dickens out of it. Added 1/3c cream (approximate- could have been as much as 2/3c), salt, cinnamon and nutmeg. Yummy!

We make this one all the time. Freezes wonderfully so you can make it before the day or big batches.

I use this recipe without the cream cheese:

The dash of cayenne pepper is SO good. I serve it before Thanksgiving dinner and it's a big hit.

My favorite squash soup:

I love the apples and onions roasted with the squash!

No recipe needed! I go through cartons upon cartons of this during the winter (aka soup season).

But I suppose some people like to make there own :)

That! I always have a carton or two stocked in my pantry for nights when were too tired or rushed to make dinner. Usually have this with grilled cheese sandwich! Yum

I don't have a recipe either - just kind of make it up as I go along. My idea is very similar to SnuggleBuggle's, but I also saute apples and onions (or leeks), and then puree it. I usu drizzle a little cream on top before serving.

I wing it too - roast or saute onions, apples and squash. Smash or puree and then add some ginger and the most important ingredient - Orange juice! It adds such a layer of complexity to the flavors.
