We are trying to figure out what sort of tablet we should get for our 2.5 year old to watch shows on long road trips. I'd rather not get an iPad and have been looking at maybe getting the Kindle Fire. Do you guys know if you can disable the touchscreen so that a toddler can hold the tablet while watching a movie? I'm not sure if that's an option, but it seems that if you can't do that she'd constantly be pulling up random menus and stopping the movie...

Is there anything else I should be considering besides the Kindle Fire? (since we don't want an iPad)

My kids are older, so we don't need it. But google came up with this app: https://play.google.com/store/apps/details?id=com.argotronic.touchblocker&hl=en for Android. Seems it can do what you want and now you can buy whichever tablet you want.

This looks like just what I was needing!
