Anyone care to share their MOST delish stuffing recipe for bake-in-a-casarole-dish? I was bringing that and cranberry sauce to dinner, and, well, let's just say "I've been served!" The host doesn't want to "accept" my contribution, so she is making her own Stove Top. It won't be a tough competition to win, but I need to keep my guard up! :D

If she doesn't want/ need stuffing, maybe you should skip it?

My stuffing is nothing special- dried out bread, butter, sauteed onion, sauteed celery, chicken broth, salt, pepper and poultry seasoning. Yummy though. :)

Chestnut, Bacon, Dried Apple and Corn Bread Stuffing
We make this one every year. Every. Single. Year.
If we go to someone else's house, we make this to eat at home ourselves. DH wants me to make a double batch.
I get the chestnuts from Trader Joe's but you could even skip them. I use extra bacon, cornbread stuffing mix (Mrs. Cubbisons) and a bit of extra broth to bake in a 9x13 pan.

People go crazy over this one. I've successfully made it with store bought focaccia if you don't want to bother with making cornbread.

No, she told me to make it. I asked for a head count and that's when she said just bring the normal amount; she was going to "supplement" with Stove Top.

This was my contribution to the meal. I don't want to be supplanted by Stove Top!

This is my family recipe, and it makes enough for a 16lb turkey, plus an extra casserole dish, so if you are just doing a large casserole dish then I would probably just half the recipe. The 16lb turkey would feed 26 people, 12 adults, and 14 grand kids if we were all in attendance at Thanksgiving or Christmas.

3 loaves of white bread, cubed (we usually let the bread stale for a day, so buy tomorrow if you can!)
3 cups of chopped celery
2/1/2 cups of chopped onions (appx. 2 large)
1 cube of butter or margarine
5 tbsp. Bell's Seasoning (http://www.bellsseasonings.com/) (I think I got my last box at Whole Foods, but you can check and see if they have it at Sprouts; Vons or Ralphs might also keep it)
2 tsp. of salt
7-8 dashes of pepper

Saute celery and onion in 1 cube of butter or margarine. Add the rest of the ingredients once celery, and onion has been sauteed. Add just enough water to moisten the dressing. Cook in 350 degree oven for about 30 minutes or until heated through (I might check it at 20 minutes though).

This is a very simple recipe and when cooked outside the turkey it is vegetarian, and almost vegan as well (my great grandma was a pioneer, I guess!)

What is your recipe for cranberry sauce? There is a delish cranberry fig port sauce recipe floating around on this board which is TDF.

I tried Katie's (kijip) stuffing recipe a few years ago and it is the most requested and raved about dish on our Thanksgiving spread. I highly recommend it.

I'm also making BeachBum's ginger lemon cookies this year to add to our dessert choices. I love all the great recipes I get on the BBB :)

I made this one last year and it is awesome. I added bacon to it because everything tastes better with bacon!

Annie, this is the exact recipe my family uses. So funny. And it must be Bell's poultry seasoning-- not any other kind. Passed down from my mother's side of the family, somewhere, because my grandmother made it the exact same way. When I've made it, I've supplemented with some fresh thyme and sage, but my parents would never think of it. They were always purists about it. We always stuff the turkey, then cook the remainder in a casserole dish for my vegetarian sister.

Jen, how interesting. It must be NE thing. My great great grandma was born in raised in Brooklyn, and my great grandma was born there, but later moved west and I guess brought the stuffing recipe with her. I will have to ask my mom.

I make Katie's sausage and bread stuffing as well. I mentioned to dh I was thinking about trying something new this year just because I felt like trying a new recipe, but he did not agree! It really is delicious!
