View Full Version : Broccoli casserole. Help.

Let me preface: I do not make casseroles. DH is not a fan, so I don't make them. However, Christmas dinner at my grandmother's house is 15 casseroles and ham. She can't do all of the work anymore, so I volunteered to make the broccoli casserole. I need a great recipe. I prefer no rice. Velveeta is okay, but I prefer a mixture with real cheese if possible.

Original recipe makes 6 servingsChange Servings
1 pound chopped fresh broccoli
1 1/2 cups cubed, cooked chicken meat
1 (10.75 ounce) can condensed cream of broccoli soup
1/3 cup milk
1/2 cup shredded Cheddar cheese
1 tablespoon butter, melted
2 tablespoons dried bread crumbs

Directions
Preheat oven to 450 degrees F (230 degrees C).
Place the broccoli in a saucepan with enough water to cover. Bring to a boil, and cook 5 minutes, or until tender. Drain.
Place the cooked broccoli in a 9 inch pie plate. Top with the chicken. In a bowl, mix the soup and milk, and pour over the chicken. Sprinkle with Cheddar cheese. Mix the melted butter with the bread crumbs, and sprinkle over the cheese.
Bake in the preheated oven for 15 minutes, or until bubbly and lightly brown.

I'm back finally at my computer.
20 ounce Bag frozen chopped broccoli (cooked and drained)
Brown Together:
1 T Butter
1 small minced onion
Add to above and cook until boiling & thickened:
1 tsp. salt
1/2 tsp pepper
3 T Sugar
1/2 Cup Tapioca (the quick one--it's in the pudding aisle!)
2 Cups Milk
Add 1 Cup Grated Cheddar Cheese; stir until the cheese melts
Add the broccoil, fold it in and then let the mixture cool
Stir in 2 Egg Yolks
Whip the 2 egg whites and fold into mixture
Bake in a walled dish/souffle bowl at 350ยบ until golden
