View Full Version : Squash soup recipe?

Anyone have a nice, simple squash soup recipe they care to share? DDs had it at daycare last week, and claimed they LOVED it. I was shocked, since at home they've never eaten anything like this.

The daycare cook gave me her recipe, but there were tons of ingredients/chopping involved, and would take me way too long. Anyone have a relatively simple recipe? My local supermarket has pre-cut squash out, so I thought I could give it a try.

I may decrease the cayenne next time and just use chicken broth vs. bullion. Also...I'm going to add an apple. I just bought a squash since the precut stuff was 4x's as expensive! It was easy to cut.

I sort of made one up that turned out well. I chopped up a whole bunch of onions, celery, carrots, and sauteed them with EVOO and fresh garlic in the Le Creuset. Do you have a handi chopper thingy? cause that makes chopping really quick. Then I added some chicken broth, and a bag of frozen squash and a bag of frozen broccoli. Brought it to a boil, then let it simmer for about 45 minutes. Added some salt, pepper, red pepper, and I can't really remember what other spices from the cupboard. Blended it in the vitamix until smooth and it turned out really creamy and yummy!
