View Full Version : shout out to new cooking light "best of" mag

picked up the cooking light best of 2013 from WF

tried a soup recipe tonight

it was absolutely delicious. seriously. we eat a lot of soup and even my son took one bite and said, "wow, this is yummy!"

made a few tweaks:

it called for three cups of chicken broth and two cups of water, but i used a box of chicken stock (four cups), so i used only one cup of water

also, i used a mix of baby spinach and baby kale b/c i had both and wanted to use up the kale

i also added more than a 1/2 cup of basil b/c again i had it on hand

i did not bother pureeing anything

and lastly, i added more carrots and celery than it called for b/c i like to see a lot of color in my soups

Thanks so much for the recommendation! I'll see if I can find a copy when I'm out today. I love getting the "Best of" cooking magazines -- I use an ATK one from 2009 regularly.

Thanks for posting this. I made it tonight and it was a big hit. I made a few tweaks based on what I had: leeks instead of celery and parsley instead of basil. I also added some garlic just because. It's definitely going on the "keeper" list.
