Any ideas of some kind of folding scissors I could keep in my purse? Or maybe scissors with some sort of case over the blades? The piece of my pocket knife I use the most is the scissors -- and now I've lost my pocket knife (very sad as it was a gift from my MIL). so I thought I should look at options before just replacing it.

my mom always had these when she did embroidery, and I bought some for knitting.

Yes! When I read this, my first thought was embroidery scissors.

Do you have a Daiso Japan store in your area? I remember buying mini scissors with a cover (for the sharp end) there. Perfect to tuck into a cosmetic bag.

some more options here (scissors with covers and pen scissors and pen sized retractable cutters etc). the kokuyo clippy scissors also have holsters which are not shown on the front page.

I have these on my keys, and never leave home without it: http://www.amazon.com/Leatherman-64010103K-Micra-Multitool/dp/B0007UQ1B0/ref=pd_cp_hi_2

I'm on my second one actually, because I forgot to leave it home during a trip, and it got confiscated during my security check for my flight. :( I was lost without it, until it was replaced.
